Artichokes are high in fiber and loaded with vitamins and minerals. Paired with the protein-rich and heart-healthy flat bean this is a delicious and nutritious dish.
Ingredients
- 8 artichokes
- 3 tablespoons of chopped parsley (leaves)
- 3 spoons breadcrumbs
- 2 tablespoons of olive oil
- 1 teaspoon chopped garlic
- 1 dcl white wine
- 350 g flat beans (or peas)
- salt
- pepper
- pinch of sugar
- water
- 1 teaspoon tomato puree
Preparation
Clean the artichokes by cutting off the bottom branch.
Mix parsley, breadcrumbs and garlic with olive oil.
Separate the petals of the artichokes so you can put some parsley mixture between them. Then put the artichokes in a pot facing up, pour in just enough water to almost cover them and simmer while covered for about 30 minutes. Then add young flat beans (or peas).
Season with salt, pepper, wine and tomato puree and let it simmer uncovered until beans are cooked.
You can add some grated cheese to the parsley and garlic mixture. Parmesan would be great, but any similar cheese will do.
